Dairy Free Vegan Potato Salad Recipe with a Hint of an Unexpected Spice

This meatless and dairy-free potato salad will have you ditching the usual and predictable conventional potato salad for sure. In the event your family vacation get-togethers are like mine, people ask “where’s the potato salad” as soon as they get to the door. This dairy-free curry potato dish is a far cry from the everyday “yellow” or “southern style” potato salad that has been served to you all year long. Add a little spice and a unique flavor to your Christmas menu. Your guests will appreciate the change!

Dairy Free Curried Potato Salad Recipe:

Potato salad dressing:

Ingredients:

Vegetable or olive oil for sautéing

Small chopped red onion

1 red bell pepper, chopped

1/2 small jalapeño pepper finely chopped

1 teaspoon of celery salt

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

2 tablespoons curry powder

1 cup raisins (be sure to soak in hot water first)

Fresh juice of 1 lime or lemon

1 cup Veganise

2 teaspoons coriander chopped

Dressing Instructions:

1. In a small skillet, drizzle oil over medium heat and allow to heat. Add the onions, bell peppers, and jalapeno peppers. Cook vegetables until soft. Then add the celery salt, cumin, coriander, turmeric, and curry powder. Cook for about 5 minutes. To remove the frosting from the skillet and get the spices out of the bottom of the pan, drizzle some lemon juice on the skillet.

2. In a food processor or blender, add the vegetable mixture and raisins. Pulse until minced and smooth. Add half of the lime or lemon juice and the vegan sauce and cilantro and continue pulsing. Then add the dressing to a bowl and add the rest of the lime or lemon juice. Stir well and refrigerate.

Salad ingredients:

1 pound diced cooked red skinned potatoes

1/2 package extra firm tofu drained

1/2 cup raisins (make sure they have been soaked in hot water)

Chopped cilantro (optional)

Instructions for the salad:

1. In a large bowl, crumble extra firm tofu (with hands). Next, add the diced potatoes, raisins, and cilantro and mix well.

2. Next, add the dressing to the salad and mix well. Refrigerate for at least 4 hours before serving.
